1. 🧀 Malai Kofta in White Gravy
Description: Royal cottage cheese-potato dumplings stuffed with dry fruits, served in a luxurious white cream and cashew-based gravy.
🧄 Ingredients:
For Kofta (makes 5–6):

Paneer (grated) – 100 g

Boiled potato – 1 medium

Cornflour – 1½ tbsp

Salt – to taste

White pepper – ¼ tsp

Nutmeg – a pinch

Dry fruit stuffing: 1 tsp each chopped raisins, cashews, almonds
For White Gravy:

Use previously shared White Gravy Base
👨🍳 Method:
🔸 Step 1: Make Koftas

Mix grated paneer, mashed potato, cornflour, salt, pepper, and nutmeg.

Divide into equal portions, stuff each with chopped dry fruits, shape into balls.

Deep-fry or shallow-fry till golden. Set aside on absorbent paper.
🔸 Step 2: Prepare Final Dish

Heat white gravy in a pan.

Add cream and a pinch of sugar for balance.

Gently place koftas before serving to avoid breaking.

Let simmer on low flame for 2 mins.
Garnish: Drizzle saffron cream, top with slivered pistachios.
Serve with: Butter naan, jeera rice, or laccha paratha.
