How it is made

1. 🧀 Malai Kofta in White Gravy

Description: Royal cottage cheese-potato dumplings stuffed with dry fruits, served in a luxurious white cream and cashew-based gravy.


🧄 Ingredients:

For Kofta (makes 5–6):

  • Paneer (grated) – 100 g

  • Boiled potato – 1 medium

  • Cornflour – 1½ tbsp

  • Salt – to taste

  • White pepper – ¼ tsp

  • Nutmeg – a pinch

  • Dry fruit stuffing: 1 tsp each chopped raisins, cashews, almonds

For White Gravy:

  • Use previously shared White Gravy Base


👨‍🍳 Method:

🔸 Step 1: Make Koftas

  1. Mix grated paneer, mashed potato, cornflour, salt, pepper, and nutmeg.

  2. Divide into equal portions, stuff each with chopped dry fruits, shape into balls.

  3. Deep-fry or shallow-fry till golden. Set aside on absorbent paper.

🔸 Step 2: Prepare Final Dish

  1. Heat white gravy in a pan.

  2. Add cream and a pinch of sugar for balance.

  3. Gently place koftas before serving to avoid breaking.

  4. Let simmer on low flame for 2 mins.

Garnish: Drizzle saffron cream, top with slivered pistachios.

Serve with: Butter naan, jeera rice, or laccha paratha.
