Paneer Pasanda in Yellow Gravy Base

Ingredients:
For Stuffed Paneer:

250 g paneer (cut into 6–8 thick squares, then sliced into halves to make “sandwiches”)

3 tbsp grated paneer (for stuffing)

1 tbsp crushed cashews

1 tbsp raisins

1 green chili (finely chopped)

1 tbsp fresh coriander (chopped)

Salt and pepper to taste

1 tbsp cornflour + 2 tbsp water (slurry for sealing)

Oil or ghee for shallow frying
For Gravy:

1½ cups Yellow Gravy Base

1 tbsp oil or butter
-
½ tsp cumin seeds
-
1 tsp ginger-garlic paste
-
½ tsp turmeric powder
-
½ tsp Kashmiri red chili powder

½ tsp garam masala
-
1 tbsp fresh cream or malai
-
1 tsp kasuri methi (crushed)

Salt to taste
Instructions:
1. Make Paneer Sandwiches:

In a bowl, mix grated paneer, cashews, raisins, green chili, coriander, salt, and pepper.

Take paneer slices, add stuffing between two slices to form a sandwich.

Seal edges with cornflour slurry and press gently.
2. Shallow Fry:

Heat a pan with ghee or oil.

Shallow-fry the paneer sandwiches until golden on both sides. Set aside.
3. Prepare Gravy:

Heat oil or butter in a pan.

Add cumin seeds, then ginger-garlic paste. Sauté till raw smell fades.
